The tour begins at a northern-style taqueria, where the protagonist is the meat and the grill. It continues to a Sinaloa-style taqueria, where the taco is transformed with marine ingredients and coastal techniques. The next stop is dedicated to the classic Mexico City style, tasting the famous taco al pastor. The tour culminates at a contemporary mill where Mexican cuisine looks to the past to reinvent itself. Here tacos are made from native corn, traditional nixtamalization and ingredients of pre-Hispanic origin.
